When I made the Spaghetti Lasagna it called for roasted butternut squash. Amy (my 8 year old) was in the midst of reading the BFG by Roald Dahl
. As we ate the butternut squash together right off the hot pan, we decided to call it Butternut Snozzcumber.

- Toss chunks of butternut squash with olive oil, ground coriander, pepper and kosher salt.
- Roast on a sheet pan for 45 minutes until golden brown on edges.
- Eat immediately.
