Spring Pea Soup


















2 slices baon, chopped
2 large shallots, chopped
--- sweat
2 tablespoons white wine
--- evaporate
1 pound peas
3 cups stock
-- boil and simmer 15 minutes
-- cool, blend, strain
1/2 cup cream
-- season, garnish with fromage blanc, goat cheese, cream, veg. etc.
